Apple and Goat Cheese Salad

This was a great salad and I would definitely make it again.

Ingredients: 6 servings

  • mixed salad greens: 6 cups
  • sliced or cubed apples: 2
  • raisins: 1/2 cup
  • olive oil: 2 tablespoons
  • balsamic vinegar: 4 1/2 teaspoons
  • honey: 1 tablespoon
  • lemon juice: 1 1/2 teaspoons
  • minced garlic: 1 clove
  • walnuts or pecans: 3 tablespoons chopped
  • goat cheese: 2 tablespoons

Pasta Salad


I love pasta salad and this is a very good recipe. It is also an easy one to change the ingredients to your own tastes.

Ingredients: serves 4

  • rotini pasta: 8 oz
  • olive oil: 1/4 cup
  • lemon juice: 3 tablespoons
  • snipped oregano: 3 teaspoons
  • snipped rosemary: 1 teaspoon
  • pepper: 1/8 teaspoon
  • minced garlic: 1 clove
  • sliced or whole black olives: 1/2 cup
  • grape or cherry tomatoes: 1 cup
  • feta cheese: 1 cup
  • sliced green pepper: 1
  • sliced yellow pepper: 1

Cook the pasta as directed and let cool. In a bowl combine oil, lemon juice, pepper, garlic, oregano and rosemary. Mix the pasta with olives, tomatoes, green pepper, yellow pepper and feta cheese. Pour dressing over the salad and mix.

When I saw the avocado, feta and almonds on it, I just knew this would be yummy. The sauce has a good kick to it with the mustard flavor (and I don’t like mustard). I will definitely make this again and again in the future.


  • olive oil: 4 tablespoons
  • white wine vinegar: 4 tablespoons
  • dijon mustard: 2 tablespoons
  • salt: 1/2 teaspoon
  • ground black pepper: 1/2 teaspoons
  • sugar: 1 pinch
  • chopped fresh parsley: 1 teaspoon
  • lemon juice: 1 teaspoon
  • garlic: 2 cloves, chopped
  • avocado: 1 peeled, pitted, and cubed
  • salad greens: 4 cups
  • almonds: 1/2 cup sliced
  • feta cheese: 2 ounces, crumbled

1. In a large bowl, whisk together the olive oil, white wine vinegar, mustard, salt, pepper, sugar, parsley, lemon juice and garlic. Add the avocado, and stir to coat with the dressing.

2. Just before serving, add the salad greens, and toss to coat with dressing. Sprinkle sliced almonds and feta cheese over the top.
